Lime and Jelly Cheesecake with Nutra Organics Gutsy Gummies

Decadent, delicious, and nostalgic; this twist on the old-fashioned jelly slice is sure to be a favourite at the next kid’s birthday party you’re hosting!

This recipe features Nutra Organics Gusty Gummies, an Australian grass-fed gelatin mix available in strawberry, blueberry, or mango flavours. Gutsy Gummies are packed with vitamin C and protein, which makes them great for your gut as well as for tissue building and repair. Plus, they’re free from artificial additives, gluten and refined sugar—what’s not to love?

Base

½ cup almonds

½ cup buckwheat kernels

½ cup shredded coconut

½ cup pitted dates soaked in boiling water for 10 minutes (reserve the liquid)

2 tbsp coconut oil

Lemon lime cheesecake

1 ½ cups cashews (soaked for 3-6 hours)

¾ cup coconut cream

¼ cup maple syrup

1 tsp of vanilla

¼ cup lemon juice

3 tbsp lime juice

1 tbsp coconut oil

Nutra Organics Gutsy Gummies jelly layer

100mL tap water

400mL boiled water

⅓ cup Gutsy Gummies Strawberry

NOTES:

  • For this recipe, we used Nutraorganics’ strawberry-flavoured Gusty Gummies mix, but you may prefer to use their mango or blueberry flavours.
  • The less water you use, the more gummy your Gutsy Gummies mix will turn out to be. For a more jelly-like consistency, add more water.

Nutra Organics Strawberries and Cream Gummies

100 mL tap water

250 mL coconut milk

⅓ cup Gutsy Gummies Strawberry

 

METHOD

For the base:

  1. Preheat your oven to 180 degrees.
  2. Place all dry ingredients and dates into a food processor or high-powered blender. Pulse until a nutty, sticky texture has formed and add reserved date water to get desired consistency.
  3. Press combined base ingredients into a slice tray lined with baking paper. Make sure the mixture is evenly spread across the tray.
  4. Bake for 10-15 minutes, or until slightly golden.
  5. Set aside to cool.

For the cheesecake:

  1. Drain and rinse your cashews, then blend together with all other ingredients until you have a smooth and creamy mixture.
  2. Pour over the cooled base and freeze for at least 3-4 hours.

For the Nutra Organics Gutsy Gummies jelly:

  1. Combine Gutsy Gummies mix with 100mL tap water and whisk to combine well. Leave to bloom for 30 minutes.
  2. To the bloomed mixture, add 400 mL boiling water.
  3. Let the mixture come to room temperature and pour over your cheesecake layer.
  4. Refrigerate until set.

For the Nutra Organics Strawberries and Cream Gummies:

  1. Combine Gutsy Gummies mix with 100mL tap water and whisk to combine well. Leave to bloom for 30 minutes.
  2. Heat coconut milk in the microwave or over the stove, and add to the bloomed mixture. Stir until well combined.
  3. Pour into Nutra Organics’ Gutsy Gummies moulds and refrigerate to set.
  4. Once set, pop out of mould and on top of slice, and cut slice into squares.
