Lauds’ Plant-Based Cheese and Pesto Scrolls

These plant-based cheese and pesto scrolls are a wholehearted celebration of plant-based alternatives, thanks to the extensive range of products created by Lauds, a brand passionate about caring for people and the planet, without compromising on nutrition or flavour.

Making these plant-based cheese and pesto scrolls can be as simple and quick, or as labour intensive as you choose! Challenge yourself to make up your puff pastry and pesto from scratch or, if time is of the essence, get your hands on some excellent store-bought products. Regardless of how you choose to make these, they’re guaranteed to be crowd-pleasers.

INGREDIENTS

Vegan puff pastry

  • 1 ½ cups plain flour
  • ½ teaspoon salt
  • 160g Lauds Cultured Oat Butter
  • 95ml cold water

Vegan pesto and Lauds Tasty Oat Melt filling

  • 2 cups firmly packed fresh basil
  • 3 tbsp pine nuts
  • 3 cloves garlic
  • 3 tbsp nutritional yeast
  • Pinch salt
  • 3 tbsp olive oil
  • 4 tbsp water
  • 1 cup Lauds Tasty Oat Melt, grated
  • Extra Lauds Cultured Oat Butter, melted
  • Splash of plant-based milk

 

METHOD

Vegan puff pastry

  1. Place the flour and salt in a large bowl and stir to combine.
  2. Break Lauds Cultured Oat Butter into chunks and rub it into the flour. Don’t go overboard here! Make sure you can still see chunks of butter in your flour.
  3. Add the water slowly and mix with a wooden spoon or your hands until you have a dough.
  4. Cover and refrigerate for 30 minutes.
  5. Remove from fridge, form into a rectangle, and roll out. Fold into thirds and roll out again.
  6. Wrap in plastic and refrigerate again for 30 minutes. Repeat this process twice more.

Vegan pesto

  1. Add basil, pine nuts, garlic, nutritional yeast and salt to a blender and blitz into a paste.
  2. Slowly add olive oil, continuing to blend.
  3. Gradually add water until desired consistency is achieved. You want your pesto to be easily spreadable but not too runny.

Scrolls

  1. Preheat oven to 180 degrees, and line a baking tray with baking paper.
  2. Divide your pastry into two and roll each section into squares of the same size.
  3. Spread pastry on one sheet of pastry.
  4. Sprinkle your grated Lauds Tasty Oat Melt plant-based cheese over the pesto, making sure it is evenly spread.
  5. Lay your second sheet of pastry over the top of the first sheet, pesto, and cheese.
  6. Using a fork, press all pastry edges together.
  7. With a knife, slice your pastry sheets into 1.5-centimetre-thick strips.
  8. Roll each slice up, forming scrolls and place onto a lined baking tray.
  9. Whisk together your melted Lauds Cultured Oat Butter and plant milk, and brush over your scrolls to glaze.
  10. Bake for 20 minutes, or until cheese has melted and pastry is golden.
