Healthy Choc Paddle Pops with Foraged For You

When we saw this recipe by Sheridan Austin (the mastermind behind our best-selling online item Foraged for You The Mothers Blend) we knew it was going to be absolutely perfect for summer sweet tooth cravings and just had to try it for ourselves!

These healthy paddle pops are full of good fats, collagen and of course a dash of the fermented, probiotic powerhouse that is The Mothers Blend! And the kids LOVE them.

 Paddle Pop Ingredients 

  • 2 tbsp Melrose MCT Oil
  • 2 tbsp Niulife Extra Virgin Coconut Oil
  • 2 tbsp Melrose Organic Grass Fed Ghee
  • 2 egg yolks
  • 2 eggs
  • 2 tbsp WholeLife Healthfoods Organic Cacao
  • 2 tbsp Gelpro Multi Collagen Unflavoured
  • 1.5 tbsp Global Organics Maple Syrup
  • 1 tsp vanilla extract
  • 1 tsp Foraged For You The Mothers Blend

 Topping Ingredients 

  • 2 tbsp coconut oil
  • 1 tbsp cacao
  • 1 tbsp maple syrup
  • Cacao nibs
  • Desiccated coconut

 Method 

  1. In a small saucepan over low-medium heat, melt down the coconut oil and ghee with the MCT oil. Set aside to cool slightly so the eggs do not scramble.
  2. Once cooled, whisk in the egg yolks and eggs. Add the remaining ingredients and blend until combined. The mixture should have a thickened consistency after blending.
  3. Pour the mixture (or scoop if it’s very thick) into popsicle molds and freeze overnight.
  4. Once frozen, remove from the molds. You can enjoy them as is, or add toppings.
  5. For the choc topping, melt down the coconut oil and then mix in the cacao and maple syrup. Drizzle over your paddle pops, sprinkle on cacao nibs, coconut or anything else you would like, and then refreeze for a few hours to make sure everything is set.
