Summer Acaí Bowl for World Vegan Month

Today we kick off World Vegan Month!

World Vegan Day began in 1994, to bring awareness to the growing vegan movement. Today, it is estimated that about 1.1% of the global population are committed vegans—that’s about 88 million people!

Plant-based diets have a number of benefits for planet and human health. They are generally high in fibre and low in cholesterol, aiding digestion, heart and brain health. While veganism may not be viable for everyone, there is certainly no harm in considering how you might be able to incorporate more plant-based foods into your life.

In light of this, we’re sharing a healthy, delicious, plant-based acaí bowl recipe, perfect for those warm summer mornings!

Acaí berries derive from South America and have an extensive range of health benefits. They’re jam-packed with antioxidants, and have the capacity to improve cholesterol levels and boost brain function. Acaí bowls can, however, be high in sugar content—so enjoy and indulge as an occasional treat.

Ingredients

  • Amazonia Açaí Energy (Frozen) Guarana blend or Unsweetened
  • 200mL coconut water
  • 1 ripe banana
  • ½ cup frozen blueberries
  • Extra ice if needed (add until you achieve a consistency you’re happy with)

Top with your favourite seasonal fruits, nuts, seeds, and granola!

We used: strawberries, blueberries, banana, kiwi fruit, rolled oats, sunflower kernels, chia seeds, cacao nibs, bee pollen and peanut butter.

Method

  1. Place all ingredients into a blender and blend until a smooth, thick paste has formed.
  2. Pour into a bowl and decorate with all your favourite toppings.
  3. Enjoy!
