Healthy-ish Loving Earth Twix Biscuits

Whether it’s a little something to snack on with a mid-morning cup of tea, an afternoon pick-me-up, or a little dessert after dinner, these Healthy-ish Loving Earth Twix biscuits are sure to satisfy your sweet-tooth craving at any time of day!

Food is fuel, there’s no doubt about it. But food is also something that can bring us great joy; it’s important to eat a healthy, balanced diet, and part of that involves allowing yourself to indulge, from time-to-time, in foods that are a little more decadent. It’s all in the 80/20 rule: eating healthy 80 percent of the time, and enjoying treats, guilt-free, the remaining 20 percent.

Loving Earth is an Australian brand that operates on three principles: healthy, sustainable, and fair. They care about what we eat, and the people who produce it, so they work with Indigenous groups in South America, using traditional harvesting methods to make products that are certified organic, fairly traded, and kept as raw as possible—better for us, and for the planet!

These Loving Earth Twix Biscuits put a healthy-ish spin on the classic biscuit, caramel, chocolate-coated Twix chocolate bar. Oats, Loving Earth Coconut Sugar and desiccated coconut form the wheat and refined-sugar-free biscuit bases, a blend of dates and sea salt are substituted for caramel, and Loving Earth’s Dark Chocolate – vegan and refined-sugar free – is melted down and drizzled over the top, to result in a crumbly, gooey, sweet and salty bite-sized treat!

Ingredients

Method

  1. Preheat oven to 200°C and line a tray with baking paper.
  2. Place dates in a bowl of warm/hot water and leave to soak for 20 minutes.
  3. Pour oats into blender or food processor and blitz until they form a floury powder.
  4. Add the blended oats to a bowl and mix in desiccated coconut and Loving Earth Coconut Sugar.
  5. Melt butter in the microwave or over the stove and add to the mixing bowl. Mix all ingredients until well combined so they form a dough.
  6. With clean hands, roll the dough into balls and then flatten into discs, about 0.5-1cm thick, on the lined baking tray. Bake for 10 minutes, or until golden.
  7. While your biscuits are baking, remove your dates from the hot water and add them to your blender or food processor. Blend the dates, adding water as needed, and a pinch of salt to taste. Blend until they form a smooth paste. This is your date ‘caramel’!
  8. Once oat biscuits are golden, remove them from the oven and leave them to cool completely.
  9. Once cooled, spoon dollops of your date caramel onto biscuit bases.
  10. Break your Loving Earth Dark Chocolate into chunks and add to a glass bowl, with coconut oil. Melt over a small pot of hot water on the stove, stirring continuously.
  11. Spoon the melted chocolate over your biscuits, and place in the fridge to set.
