Fudgy Protein Brownies

Sometimes an indulgent little treat is needed for some mid-morning motivation or to pick you up from a 3pm slump… enter our protein brownies!

These are about as guilt-free as it gets for something this decadent, with no refined sugars or vegetables oils needed in this recipe. These brownies also contain 1 cup of cooked sweet potato for some healthy carb action, but you would never guess this by tasting them!

Plus, we’ve included 60g of Happy Way’s delicious Vanilla Whey Protein powder for some extra protein goodness. Swap out for a vegan alternative (Like Prana On’s Power Plant) if you’re sensitive to whey.

Tip: this may be controversial, but we think the best way to quickly cook a sweet potato is…. In the microwave! Peel the skin off with a vegetable peeler, stab it all over with a fork and then pop it in the microwave for about 10-12 minutes.

Ingredients

  • 60g Happy Way Vanilla Ice Ice Baby Whey Protein Powder
  • 2 eggs
  • 1 cup cooked & mashed sweet potato
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup cacao powder
  • ½ tsp baking powder
  • ½ tsp sea salt
  • 100g dark chocolate, roughly chopped
  • ¼ cup walnuts, roughly chopped

Method

  1. Preheat the oven to 180 degrees and line a 20x20cm square baking tin with baking paper.
  2. In a mixing bowl, whisk together the eggs, maple syrup and vanilla. Add in the cool mashed sweet potato and mix through.
  3. Add in the cacao, protein powder, baking powder and sea salt and gently fold everything together using a spatula until the mixture is just combined. Fold in half of the dark chocolate and walnuts.
  4. Evenly pour the batter into the lined baking tin and top with the remaining chocolate and walnuts.
  5. Bake for 20 minutes. Once done, remove and allow to cool in the tin for at least 10 minutes before slicing.
