Your WholeLife Guide to Buying Cacao & Cocoa: Which One Belongs in Your Pantry?

Your WholeLife Guide to Buying Cacao & Cocoa: Which One Belongs in Your Pantry?

Not sure which to grab? We’ve got you covered.

We get asked this one a lot in store; you’re standing in the chocolate aisle, there’s cacao powder on one shelf and cocoa powder on the other, and you just want to know which one to put in your cart.

Here’s our honest guide to help you choose.

First, a quick note on where they both come from

Both cacao and cocoa start from exactly the same place, the cacao bean. The difference comes down to how each one is processed after harvest, which affects their flavour, their nutrition, and ultimately how they behave in your kitchen.

Buy Cacao Powder If…

You’re someone who loves adding a chocolate hit to smoothies, bliss balls, raw-style slices, or energy balls, cacao powder is your go-to. It has a bold, intense, slightly bitter chocolate flavour and is processed at lower temperatures, keeping it closer to its natural state.

It’s worth knowing that cacao powder is naturally rich in magnesium, iron, potassium, and zinc, and contains antioxidant compounds called flavonoids. Because of the gentler processing, it tends to hold onto slightly more of these naturally occurring nutrients, which is a nice bonus.

Just keep in mind that its bitterness means you may want to add a little extra natural sweetener in your recipes.

Best for: smoothies, raw treats, bliss balls, no-bake slices, cacao lattes

Buy Cocoa Powder If…

You’re more of a baker. Cocoa powder is roasted at higher temperatures, which gives it that familiar, smooth, rounded chocolate flavour most of us grew up with. It’s mellower and less bitter than cacao, which makes it ideal for cakes, brownies, muffins, and hot chocolates.

Cocoa powder is still a genuinely nutritious ingredient; it contains many of the same minerals as cacao. The nutritional difference between the two is more modest than many people expect.

Best for: cakes, brownies, cupcakes, hot chocolate, muffins, biscuits

Can You Swap One for the Other?

Generally, yes, but with a couple of small adjustments:

  • Swapping cocoa for cacao? Add a touch more sweetener to balance the extra bitterness.
  • Swapping cacao for cocoa? Your bake may be slightly lighter in flavour, but it’ll still be delicious.
