Turmeric Gingerbread Men

It’s beginning to feel a lot like Christmas… even more so when you smell the sweet-spicy scent of our vegan gingerbread men baking in the oven. With notes of ginger, cinnamon and the added anti-inflammatory benefits of turmeric, everyone in the family is sure to enjoy making, decorating and most importantly devouring these biscuits!

Ingredients:

  •  1 tbsp chia seeds
  • 400g plain flour
  • 200g coconut oil
  • 2 tbsp ground ginger
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 200g dark muscovado sugar
  • 50g maple syrup
  • 50ml aquafaba (liquid from a can of chickpeas)
  • 250g icing sugar
  • 1/4 tsp lemon juice

Prep: 25 minutes

Cook: 10-12 minutes

Makes: 20 biscuits

Let’s Begin:

Method:

  1. Heat your oven to 180ºC and line two baking trays with baking paper.
  2. Soak the chia seeds in a small bowl with 3 tbsp water and leave for 10 minutes until gloopy.
  3. Put the flour in a large mixing bowl and rub in the coconut oil until it’s completely incorporated into the flour. Stir in the spices.
  4. In another bowl, mix together the sugar, maple syrup, chia mixture and 2 tbsp water until smooth. Pour your wet mixture into the flour mixture and stir to combine into a dough.
  5. Roll out the dough on a floured surface until 1-2cm thick, cut into gingerbread men and bake for 10-12 minutes until they are just starting to darken at the edges. Place on wire rack to cool completely.
  6. Whip the aquafaba in a bowl using electric beaters until nice and foamy. Add ¾ of the icing sugar and whisk until smooth and thick. Whisk in the rest of the icing sugar and the lemon juice until the mixture forms stiff peaks. Transfer into a piping bag and use to create designs on your little gingerbread men.
