Ingredients:
- 1 tbsp chia seeds
- 400g plain flour
- 200g coconut oil
- 2 tbsp ground ginger
- 1 tsp turmeric
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 200g dark muscovado sugar
- 50g maple syrup
- 50ml aquafaba (liquid from a can of chickpeas)
- 250g icing sugar
- 1/4 tsp lemon juice
Prep: 25 minutes
Cook: 10-12 minutes
Makes: 20 biscuits
Let’s Begin:
Method:
- Heat your oven to 180ºC and line two baking trays with baking paper.
- Soak the chia seeds in a small bowl with 3 tbsp water and leave for 10 minutes until gloopy.
- Put the flour in a large mixing bowl and rub in the coconut oil until it’s completely incorporated into the flour. Stir in the spices.
- In another bowl, mix together the sugar, maple syrup, chia mixture and 2 tbsp water until smooth. Pour your wet mixture into the flour mixture and stir to combine into a dough.
- Roll out the dough on a floured surface until 1-2cm thick, cut into gingerbread men and bake for 10-12 minutes until they are just starting to darken at the edges. Place on wire rack to cool completely.
- Whip the aquafaba in a bowl using electric beaters until nice and foamy. Add ¾ of the icing sugar and whisk until smooth and thick. Whisk in the rest of the icing sugar and the lemon juice until the mixture forms stiff peaks. Transfer into a piping bag and use to create designs on your little gingerbread men.
