TikTok Inspired Green Goddess Salad

We all love chips and dip, so why not make it an all the time food rather than just a sometimes food? This healthy and super delicious Green Goddess Salad with corn chips has gone viral on Tiktok and we just had to give it a go ourselves!

This recipe is inspired by Baked by Melissa.

 Salad ingredients (all finely diced up – think confetti size): 

  • ¼ green cabbage
  • 6 baby cucumbers
  • ½ bunch spring onions
  • ¼ cup chives
  • Absolute Organic Corn Chips

 Green Goddess dressing ingredients: 

  • 1 cup basil
  • 1 cup baby spinach
  • 1 clove of garlic
  • Juice of 1 lemon
  • ¼ cup olive oil
  • ¼ cup of nuts (we used cashews and walnuts)
  • ¼ cup nutritional yeast
  • 2 tbsp apple cider vinegar
  • Pinch of himalayan salt

 Method: 

  1. Chop up all your salad ingredients and add them together into a bowl (yes, it is a lot of chopping but the result is worth it!)
  2. Add all your dressing ingredients to a blender and blender until it’s smooth
  3. Pour the dressing over the salad and toss to coat evenly. Scoop up your salad with corn chips and enjoy!
