Spring Superfood Salad with Love Your Guts

Spring is the perfect time to refresh your diet with vibrant, nutrient-packed dishes that not only satisfy your taste buds but also support your overall health. Our Spring Superfood Salad, featuring Love Your Guts Beetroot & Ginger Sauerkraut, is a delightful way to brighten up your meals while giving your gut and immune system the boost they need.

We’ve incorporated some of our favourite products from the WholeLife Healthfoods range, like the Cranberry & Nut Mix and Organic Pepitas, to add a delightful crunch and an extra boost of nutrients.

Here’s how you can recreate this gut-friendly, immune-boosting salad at home:

Ingredients:

– 1 x bunch kale, stems removed and sliced thinly (about 2 cups)

– 1 x bunch mixed lettuce, washed and broken apart

– 1 x bunch parsley, roughly chopped

– 1/2 lemon, juiced

– Drizzle of extra virgin olive oil

– Drizzle of balsamic vinegar

– 1x medium sweet potato, peeled and diced

– 1x can organic chickpeas, drained and rinsed

– 1/3 cup extra virgin olive oil

– 1 tsp paprika

– 1/2 red onion, sliced

– 1 pink apple, thinly sliced

– 1/4 cup WholeLife Healthfoods Cranberry & Nut Mix

– 1/4 cup WholeLife Healthfoods Organic Pepitas

– 2 tbsp Love Your Guts Ginger & Beetroot Sauerkraut

– Sprinkle of sesame seeds

– Salt & pepper to taste

Method:

  1. Preheat your oven to 200 degrees Celsius.
  2. Line a baking tray and spread out the chickpeas. Drizzle with extra virgin olive oil, sprinkle with paprika, salt, and pepper, then toss to coat.
  3. On another tray, spread out the diced sweet potato. Drizzle with extra virgin olive oil, sprinkle with salt and pepper, and toss to coat evenly.
  4. Bake both trays in the oven for around 20-25 minutes, or until golden brown. Once done, remove from the oven and allow them to cool slightly.
  5. In a large bowl, combine the kale, mixed lettuce, and parsley. Dress with lemon juice, a drizzle of extra virgin olive oil, and balsamic vinegar. Toss to mix.
  6. Add the roasted sweet potato, chickpeas, sliced red onion, and pink apple to the salad. Top with WholeLife Healthfoods Cranberry & Nut Mix and Organic Pepitas.
  7. Finally, add the Love Your Guts Ginger & Beetroot Sauerkraut and sprinkle with sesame seeds. Season with salt and pepper to taste.
