Spinach Dahl Recipe

  • 2 cups yellow split peas, rinsed
  • 2 tsp ground turmeric or finely grated fresh turmeric
  • 2 tbs Melrose Grass-Fed Ghee
  • 2 tbs Melrose Coconut Oil
  • 1 tsp mustard seeds
  • 1 tsp dried chilli flakes
  • 2 tsp whole cumin seeds
  • 3 sprigs fresh curry leaves
  • 2 tsp finely chopped garlic
  • 1 cup coconut milk or cream
  • 200g spinach leaves
  • Salt flakes, to season

Method:

  1. Prepare the Split Peas:
    In a large saucepan, combine the rinsed split peas, turmeric, and 1.5–2 litres of water. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for approximately 30 minutes, or until the peas are tender and the water has almost evaporated.
  2. Infuse the Spices:
    In a frying pan, melt the Melrose Grass-Fed Ghee and Coconut Oil over medium heat. Add the mustard seeds, chilli flakes, cumin seeds, curry leaves, and garlic. Sauté for a few minutes, allowing the spices to release their fragrance and the mustard seeds to pop.
  3. Combine and Simmer:
    Carefully pour the spiced oil mixture into the dahl and stir well. Add the coconut milk and continue to simmer for another 5 minutes, ensuring the dahl doesn’t stick to the pan. Stir in the spinach leaves and season with salt flakes to taste. If a thinner consistency is desired, add more coconut milk.
  4. Serve and Enjoy:
