Ingredients

  • 2 tbsp Gevity Rx A.M. Cleanse Bone Broth Body Glue®
  • 6 large free-range eggs
  • 2 cups baby spinach
  • 2 cloves garlic, minced
  • 1 green capsicum, finely sliced
  • 1 jalapeño, finely sliced
  • ½ brown onion, finely sliced
  • ½ avocado, finely sliced
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp cumin
  • ½ cup fresh herbs (basil & coriander)
  • 1/3 cup fresh parsley
  • ¼ cup crumbled goats cheese (omit for dairy-free)
  • Crusty bread and lime wedge, for serving

Basil pesto

  • 2 tbsp olive oil
  • 1 tbsp crumbled goats cheese
  • 1 tsp apple cider vinegar
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ¾ cup fresh basil
  • ¼ cup pine nuts

Method:

  1. Blend all pesto ingredients in a high-speed blender until smooth. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Sauté onion for 3–4
    minutes until softened. Add garlic, green capsicum and jalapeño; cook
    for 2 more minutes.
  3. Season with salt, pepper and cumin. Stir in half the pesto, Gevity Rx A.M. Cleanse Bone Broth Body Glue®, and 1.5 cups boiling water. Simmer for 5 minutes.
  4. Transfer mixture to a high-speed blender, add spinach and parsley,
    and blend until smooth.
  5. Return to skillet and bring to a gentle simmer. Make 6 wells and crack an
    egg into each. Cover and cook for 5–7 minutes, until eggs are just set.
  6. Top with goats’ cheese, fresh herbs, avocado and remaining pesto.
    Season to taste. Serve with crusty bread and a lime wedge.
