This herby, cheesy, protein-packed version of French toast is easy and delicious and sure to become a brunch dish on regular rotation in your kitchen!

INGREDIENTS
- 9-10 truss tomatoes
- 6 slices Venerdi Activated Six Seeds Sourdough Bread
- 3 free range eggs
- ¼ cup milk of your choice
- ½ cup finely grated parmesan cheese
- 1 tsp wholegrain mustard
- ½ tsp onion powder (optional)
- ½ tsp garlic powder (optional)
- Handful fresh parsley or basil, roughly chopped
- Olive oil for roasting and frying
- Sea salt and cracked black pepper
- Sliced avocado and fresh herbs to serve
INSTRUCTIONS
- Preheat oven to 180°C. Place the tomatoes on an ovenproof tray. Drizzle with olive oil and a good seasoning of salt and pepper. Roast for 25 minutes.
- Lightly toast each piece of bread and then allow to cool. Whisk together the eggs, milk, cheese, mustard, onion and garlic powder and herbs. Add a good grind of cracked black pepper.
- Heat a skillet over medium heat. Add a good glug of oil.
- Soak the bread in your egg mixture (2 pieces at a time) for a few minutes each. Turn it over and make sure it is well coated. As you lift each piece out ensure there is some cheese and herbs on top, or spoon it on top when the bread is in the pan. Cook for a couple of minutes on each side until cooked through and golden.
- Divide the pieces between plates. Serve with roasted tomatoes and some sliced avocado.
