Mushroom “Meat” Balls with Niulife

Serves 6.

INGREDIENTS:

METHOD:

  1. Sauté brown onion in olive oil for approximately 5 minutes.
  2. Add mushrooms, increase heat and cook for 10 minutes, stirring frequently.
  3. Add garlic, rice and oats. Cook for a further 5 minutes.
  4. Add Niulife Smokey BBQ Extra Thick Coconut Amino Sauce, salt and pepper. Mix and simmer for 1-2 minutes.
  5. Transfer to a blender or food processor and pulse into all ingredients have combined, retaining a slightly chunky texture.
  6. Transfer to the fridge for 15-20 minutes and preheat oven to 190°C.
  7. Arrange into small balls (it is easiest to use your hands) and place in a lined baking tray.
  8. Bake for 10 minutes, turn over and cook for a further 8 minutes.
  9. Finish by lightly frying if you’d like to create a slightly crispy texture.
  10. Serve with extra Niulife Smokey BBQ Extra Thick Coconut Amino Sauce or tomato salsa.
