Homemade Immunity Chicken Ramen

There’s nothing more comforting than a warm bowl of ramen, especially when it’s packed with nourishing ingredients that support your immune system. This quick and easy immunity-boosting chicken ramen is ready in under 30 minutes, making it the perfect meal for busy weeknights or whenever you need a cozy, nutritious dish.

Ingredients:

  • 2 tablespoons sesame oil
  • 4 small chicken breasts or tenderloins, whole
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 100g shiitake mushrooms, thinly sliced
  • 2 tablespoons Best of the Bone Original Bone Broth
  • 5 litres water
  • 1 tablespoon soy sauce
  • 2 tablespoons miso paste
  • 400g ramen noodles
  • 2 whole baby bok choy, sliced in half
  • 2 spring onions, sliced
  • Chilli flakes (optional for garnish)
  • 4 soft boiled eggs (optional for garnish)

Instructions:

  1. Add 1 tablespoon of sesame oil to a large pot and heat over medium high heat. Cook the chicken for 5 minutes per side or until cooked through. Remove the chicken from the heat and allow it to rest.
  2. While the chicken is cooking, cook the noodles according to the instructions on the packet. Once the noodles are done, drain them and rinse with cool water.
  3. Reduce the heat on the large pot to medium and add the remaining 1 tablespoon sesame oil, garlic and ginger to the pot and stir. Cook for 2 minutes.
  4. Add the sliced mushrooms to the pot and stir. Then, add the bone broth, soy sauce, miso paste and slowly add the water. Stir to combine.
  5. Bring the broth to a simmer, then remove from the heat.
  6. Divide your cooked noodles into four bowls, then place halved bok choy in each bowl, carefully pour the broth with mushrooms, ginger, and garlic over top. Slice your chicken and then add on the noodles. Garnish with spring onions, a sprinkle of chilli flakes, and a soft-boiled egg.
  7. Serve and enjoy!
