Crunchy, chocolatey, and held together with the magic of Gevity’s Goodstachio Spread, these no-bake bars come together in minutes, and then patiently wait in the fridge while you try not to eat them before they’ve set. Pistachio lovers, this one’s for you. Everyone else, you’re about to become one.

Gevity’s Goodstachio Spread is made with real pistachios and crafted to be as good for your gut as it is for your tastebuds. Swap it into anything you’d usually reach for a nut butter for, or just eat it straight from the jar. No judgement here. Find it in store or online at WholeLife.

Ingredients

  • 150g Gevity Goodstachio Spread
  • 1 tbsp coconut oil
  • 3 cups brown rice puffs
  • 100g dark dairy-free chocolate, roughly chopped
  • 2 tbsp roughly chopped pistachios

Method

  1. Line a 20cm square cake tin with baking paper and set aside.
  2. In a small microwaveable bowl, combine the Goodstachio Spread and coconut oil. Heat for 30–40 seconds until the coconut oil has melted. Stir well to combine.
  3. In a large mixing bowl, add the brown rice puffs, then pour in the Goodstachio mixture. Use a spatula to mix until every puff is well coated.
  4. Tip the mixture into your prepared tin and press down firmly until flat and even. Refrigerate for one hour.
  5. Melt the dark chocolate in a small microwaveable bowl in 30-second increments, stirring between each. Pour over the chilled base and smooth with an offset spatula. Scatter over the chopped pistachios.
  6. Return to the fridge for another hour to set completely.
  7. Lift out of the tin and cut into 16 even pieces.
  8. Enjoy straight from the fridge.

Note: Store these bars in the fridge, they will melt in the heat.
