Gluten-Free Savoury Muffins with Bone Broth

Ingredients
- 150–200g cooked, diced preservative-free bacon
- 1.5 cups grated carrot
- 1 cup grated zucchini
- 1 cup almond flour
- 1 cup tapioca flour
- 4 eggs
- ½ cup melted ghee (or unsalted butter)
- 1 tbsp Gevity Rx Natural Bone Broth Body Glue®
- 1 tbsp apple cider vinegar
- ½ tsp baking soda
- 1–2 tsp dried herbs (optional)
Method
- Preheat your oven to 180°C.
- Grease and line a muffin tray with muffin cups.
- Add all ingredients to a large bowl and mix until well combined.
- Spoon the mixture evenly into the prepared muffin tray.
- Bake for 30 minutes, or until golden brown and cooked through. If you’re making smaller muffins, begin checking at the 20-minute mark.
- Remove from the oven and allow the muffins to cool slightly.
- Serve warm, ideally with a spread of butter.
