Crispy Jasmine Rice Salad: A Thai-Inspired Crunchy Delight

Ingredients:
For the Crispy Rice:
- 2 cups Sanmik Farms Organic White Jasmine Rice
- 3 cups water
- 1 tsp salt
- ½ cup your choice of oil (for frying)
For the Salad:
- 1 cup carrots, shredded
- ½ cup cucumber, thinly sliced
- ½ cup red cabbage, finely shredded
- ¼ cup spring onions chopped
- ¼ cup fresh coriander chopped
- ¼ cup fresh mint leaves, shredded
- ¼ cup roasted peanuts, crushed
- 1 red chilli, finely sliced
- 1 tbsp sesame seeds
For the Dressing:
- 3 tbsp lime juice
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp ginger, grated
- 1 garlic clove, minced
Instructions:
1. Cook & Prepare the Rice
- Cook the Rice: In a pot, combine rice, water, and salt. Bring to a boil, reduce the heat, cover, and simmer for 12–15 minutes until the water is absorbed. Remove from heat and allow to cool covered, occasionally fluffing with a fork.
- Bake the Rice: Preheat your oven to 180°C. Spread the rice evenly on a baking sheet. Drizzle with your choice of oil and toss to coat. Bake for 25–30 minutes, stirring halfway through, until the rice becomes golden brown and crispy. Remove from oven, allow to cool and break into bite-sized pieces.
2. Make the Dressing
In a small bowl whisk together lime juice, soy sauce, honey, sesame oil, ginger, and garlic. Set aside.
3. Assemble the Salad
- In a large bowl, combine the shredded carrots, cucumber, red cabbage, spring onions, coriander, mint and chilli.
- Add the crispy rice chunks and toss gently.
- Drizzle with the dressing and sprinkle with sesame seeds and crushed peanuts.
4. Serve & Enjoy!
