Buffalo Chicken Tacos with Mingle

Taco Filling
- 50g butter
- 1 brown onion (diced)
- 1 tbsp tomato paste
- 1 x sachet Mingle’s Creamy Buffalo Chicken Bake Recipe Base
- 500g chicken breast (diced)
- 200g spinach leaves (roughly chopped)
- 1 red capsicum (thinly sliced)
- 150ml of chicken stock
- 200g cream cheese (or substitute with Greek yoghurt)
- 200g sour cream
- 1 lemon (juiced)
Taco Toppings
- 10 mini soft tortillas
- 1 yellow capsicum (sliced)
- 1 cucumber (diced)
- 1 punnet cherry tomatoes (quartered)
- 3 spring onions (sliced)
- 150g grated cheese (optional)
Method
- Heat the butter in a pan over medium heat, add onion, tomato paste and Mingle’s Creamy Buffalo Chicken Bake Recipe Base. Cook for 3 mins.
- Add the chicken and cook until browned.
- Add sour cream, cream cheese, lemon juice, chicken stock, red capsicum and spinach. Cook until sauce combines and chicken is cooked through.
- Remove from the heat and shred chicken using two forks.
- Fill tortillas with buffalo chicken mixture and top with yellow capsicum, cucumber, cherry tomatoes, spring onions and grated cheese.
