Beef Tacos & Pineapple Salsa with Best of the Bone

Ingredients

For the Steaks & Marinade:

  • 10 mini corn tortillas
  • 2 porterhouse steaks
  • 1 tbsp Best of The Bone Bone Broth Concentrate Original
  • 2 tbsp olive oil
  • 1½ cups fresh coriander
  • 2 garlic cloves
  • 1 fresh jalapeno
  • ½ lime, juiced
  • Salt and pepper

For the Pineapple Salsa:

  • 2 cups sliced pineapple
  • ½ small red onion
  • ½ cup fresh coriander
  • ½ lime, juiced

For the Toppings:

  • 1 fresh jalapeno, sliced
  • 1 cup Greek yogurt
  • 1 garlic clove, thinly sliced
  • Extra coriander for garnish

Method

Step 1: Make the Steak Marinade
Combine coriander, garlic, jalapeno, olive oil, lime juice, salt, pepper, and Best of the Bone Original in a food processor. Blend until smooth. Add more olive oil if needed for consistency.

Step 2: Marinate the Steaks
Place your steaks on a plate and cover with the coriander paste. Set aside to allow the flavours to infuse.

Step 3: Prepare the Pineapple Salsa
Thinly slice pineapple, red onion, and coriander. Place in a bowl, drizzle with olive oil and lime juice, and set aside.

Step 4: Make the Yogurt Sauce
Mix thinly sliced garlic with Greek yogurt, and season with salt and pepper. Set aside.

Step 5: Cook the Steaks
Heat a BBQ or frying pan on high. Add olive oil and sear the steaks for 2–3 minutes per side until lightly charred and caramelised. Remove and let rest for at least 5 minutes.

Step 6: Heat the Tortillas
Warm tortillas on a dry frying pan, lightly charring for extra flavour.

Step 7: Slice the Steaks
Thinly slice the rested steaks and mix them with their juices.

Step 8: Assemble the Tacos
Top each tortilla with yogurt sauce, pineapple salsa, steak slices, coriander, jalapenos, and a squeeze of lime.
